Kemira Provian®

Kemira Provian® is a functional co-spray dried composition based on two organic salts; sodium acetate and sodium lactate, which have proven synergistic effects for meat preservation. It is delivered as a free flowing powder, making it easy to handle, convenient to store and more cost effective than liquid alternatives. It offers superior performance in extending shelf life and enhancing food safety.

Kemira Provian extends shelf life of meat products by effectively inhibiting the growth of total aerobic bacteria. It also acts as an effective safeguard against pathogens commonly found in meat products such as Listeria, Salmonella, E.coli, etc. and thus reduces the risk of food born diseases. These findings have been verified through extensive testing, both in Kemira’s in-house laboratories as well as by independent research institutes.

The mildly salty taste of Kemira Provian has been shown to enhance the flavor of cooked meat products. There are no adverse effects on sensory parameters such as taste, after-taste, odor or appearance. Furthermore, due to its neutral pH value and buffering capacity, Kemira Provian does not lower the pH of cooked meat products. This means less cooking losses.

The dosage level of Kemira Provian depends on local legislation, meat type and shelf life requirements.

For optimal effects, we recommend a dosage level of 1% Kemira Provian, based on the total meat weight.
